Olive, white bean and orange salad

Method
small Spanish onion
12 Kalamata olives400g tin cooked white beans50ml olive oilsea salt and freshly ground black pepperparsley leaves
Notes
- Peel and segment 2 of the oranges and place into a mixing bowl
- Peel and finely slice the onion
- Remove the stones from the olives and cut into slivers
- Drain the white beans and add them, with the onion and olives, into the bowl
- Juice the last orange and pour over the salad with the olive oil
- Season with salt and pepper, toss through the parsley leaves and serve
