Penne with zucchini, broccoli and parmesan

  • 2 cloves garlic
  • 1 large red chilli
  • 100ml olive oil
  • 6-8 anchovy fillets
  • 300g broccoli
  • 4 small zucchinis
  • freshly ground black pepper
  • 400g penne pasta
  • freshly grated parmesan
  • rocket


  1. Peel and fi nely slice the garlic
  2. Slice the chilli
  3. Heat a large frypan over a medium heat
  4. Add the oil, garlic, chilli and anchovies and cook until soft
  5. Cut the broccoli into florets and cook in boiling water until just soft
  6. Grate the zucchini and add both the cooked broccoli and zucchini to the frypan
  7. Simmer in the oil until all is soft and a sauce like consistency
  8. Season with black pepper and keep warm
  9. In a large pot of boiling water cook pasta until al dente
  10. Drain and toss through the warm sauce
  11. Serve with lots of freshly grated parmesan and a rocket salad
